Recipe of the Week: Fluffy Pancakes with Vinegar!?

Good Evenings friends!


Today has been such a wacky day. I was supposed to spend the week with my Mother-in-Law, but she had to fly out of the city today to attend to a family member's health crisis! So I've pretty much got the house to myself for most of the week. I'm thinking it's the perfect scenario for trying out some new recipes, making some Youtube content, and definitely for writing a ton of blog posts.


I might even surprise her with some good Spring cleaning! Wish me luck!



 

Today's recipe of the week is a modified pancake recipe from AllRecipes that has been reviewed over 10,000 times with an average rating of just under 5/5 stars! Needless to say, this pancake recipe is the BOMB.


The first time I read it through however, I was shocked to see "vinegar" on the ingredient list! It sounded like a quick way to ruin the pancakes, not improve them. But here's why vinegar is the key to these fluffy pancakes: volume.


Do you remember your 6th grade Science Fair? There was always a kid with a volcano experiment, ready to impress a gymnasium full of middle schoolers. Everyone looked forward to the moment when the volcano erupted, sending a foamy concoction of baking soda and vinegar shooting through the air.


Well, that impressive volcanic reaction is basically what happens when you add vinegar to your baking soda pancakes. Full and foamy volume, creating the fluffiest pancakes ever.

Fluffy Volcano Pancakes



Ingredients:


1 cup 2% milk

2 tablespoons white vinegar

1 1/4 cup all-purpose flour

2 tablespoons white sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 egg

1 tablespoon butter, melted




Directions:


Mix the milk and vinegar together, then leave it for 5 minutes to "sour."


In the meantime, add the "dry" ingredients together (flour, sugar, baking powder, baking soda, and salt.) Finally, mix the butter and egg into the milk mix and then pour the flour mixture in with the liquids. Mix until there aren't any lumps left.


As far as cooking the pancakes, resist flipping them until bubbles appear on the surface of the pancakes. Cook until browned. Enjoy!
